Apricot Squares
Ingredients
1 cup sugar 3/4 cup shortening (1 stick margarine and 1/2 stick butter) 1 egg 1 tsp. vanilla 1/2 tsp. baking powder 2 cups plus 1 tbsp. flour 1 pkg coconut (3 1/2 oz.) 1/2 cup choped walnuts 1 jar pineapple or apricot jam |
Directions
Cream shortening and sugar. Add egg and vanilla. Sift together flour and baking powder. Stir flour mixture into creamed mixture and add coconut and nuts. Pat two thirds of mixture into 9"x13" pan; spread apricot jam over this mixture and drop remaining one-third of batter by bits on top of jam and bake until golden brown on top in a 350 degree oven for 35-40 minutes.
