Carrot Cake
Ingredients
Cake 1 1/2 cup Wesson oil 2 cups sugar 4 eggs 2 cups flour 1 tsp. salt 2 tsp. baking soda 3 tsp. cinnamon 2 tsp. vanilla 4 cups grated carrots Icing 1 stick margarine or butter 1 pkg. confectioner's sugar 8 oz cream cheese 2 tsp. vanilla |
Directions
Cake Combine sugar, oil and eggs. Sift flour, soda salt and cinnamon together. Add to sugar mixture and beat well. Add vanilla and grated carots. Bake in 3 well greased layer cake pans. When cooled, ice with cream cheese icing. Icing Soften margarine and cheese. Beat together. Add sugar and vanilla. Beat until smooth and of spreading consistency Betty Young |
