Cheese Cake
Ingredients
Crust 7 finely crushed graham crackers 2 tbsp. melted butter 2 tbsp. sugar Filling 1 pt. sour cream 1 1/2 lbs. small curd cottage cheese 1 8-oz. pkg. cream cheese 1/4 lb. butter, melted 1 1/2 cup sugar 4 eggs 1/3 cup corn starch 2 tbsp. lemon juice |
Directions
Crust Cover bottom of 10-10 1/2 spring form pan with foil. Combine graham crackers with butter and sugar. Press firmly on bottom of spring form pan. Refrigerate while making filling. Filling In blender combine cottage cheese, eggs and lemon juice. Mix on liquefy until smooth. Pour into large mixing bowl. Blend in all remaining ingredients. Beat on high speed until light and smooth and fluffy. Pour into spring form pan. Bake 1 hour at 325 degrees. Then turn off oven - do not open - leave cake in oven another 2 hours. Then cool on a rack. When cool, refrigerate. To unmold, oil edges of plate. Turn cake onto oiled plate after removing sides of spring form pan. Peel off foil and invert into cake plate. Freezes well.
