Chicken Cacciatore
Ingredients
1 onion,chopped 1/4 cup chopped celery 1/4 cup chopped carrot 1 green pepper, sliced 1/2 lb. sliced mushrooms 2 cloves garlic, minced 1/4 cup flour salt and pepper 2 1/2 to 3 lbs. chicken, cut in pieces 3 tbsp. olive oil 1/2 tsp. thyme 1/2 cup white wine 1 lb. can tomatoes |
Directions
Heat 2 tbsp. oil in fry pan, medium heat. Dredge chicken in flour and brown chicken about 8 minutes. remove from pan. Add onion, celery and carrot; cook covered for 5 minutes. Add remaining oil, pepper, mushrooms, garlic, 1 tsp. salt, and thyme. cover and cook 8 minutes. Raise heat, add wine. Boil 1 minute. Lower heat and add chopped tomatoes with liquid and chicken. Cover an simmer 40-45 minutes. Terrific prepared ahead and reheated. |
