Corned Beef Hash
Ingredients
1 can corned beef, diced 3 medium potatoes, boiled and diced small salt and pepper to taste 1 small onion, finely chopped 6 sprigs minced parsley 1/2 green or red pepper, chopped (optional) 1/4 cup butter 1/4 cup water |
Directions
Mix first six ingredients to combine. Remove to skillet in which 1/4 cup butter has been melted. Pour 1/4 c. water over the top. Cook over low heat until a crust forms on the bottom (about 40 minutes). Fold and turn onto a platter. For roast beef hash, substitute 2 cups diced roast beef.
