Fruit Cake
Ingredients
1 cup raisins 1 cup water 1 tsp. baking soda 1/4 cup shortening 1 cup sugar 1 1/2 cup flour 1 pinch salt 1 tsp. cloves nutmeg (3 or 4 shakes) 1/2 cup chopped nuts |
Directions
Boil 1 cup raisins in water for 10 minutes; Strain liquid into cup (yeild 3/4 cup, add water if necessary to make 3/4 cup). Cream shortening and sugar and baking soda. Add other dry ingredients. Add liquid. Add raisins and fold in 1/2 cup of nuts. Bake at 350 degrees for 1 hour in greased, floured glass loaf pan. Excellent for those who do not like orange peel and other candied fruits.
