Marinated Vegetables
Ingredients
Vegetables Broccoli florets Cauliflower florets Sliced zucchini or summer Squash Handful of green beans, sliced 2 or 3 carrots, cut diagonally Handful of snow peas, sliced 1 cup celery, diagonally sliced 10 mushrooms, sliced Note: There should be about 4 cups of vegetables in all when cut up. 1 can black olives Dressing: 1/4 cup sugar 1 cup wine vinegar 3/4 cup olive or salad oil 1/2 cup water 1 tsp. oregano 1 tsp. garlic powder 1 1/2 tsp. salt |
Directions:
In large stainless or corning pan combine sugar, wine vinegar, olive or salad oil, water, oregano, garlic powder and salt. Bring to full boil and add vegetables (.do not add black olives at this time). Cook for 10 to 15 minutes. Add olives (do not cook). Let mellow at least 24 hours. This recipe may be doubled. it keeps for a few weeks in the refrigerator. Add more marinade if needed. Ellen Giampietro |
