Mexican Wedding Cake
Ingredients
2 cups sugar 2 eggs 2 cups flour 2 tsp. baking soda 1 cup broken walnuts 20-oz crushed pineapple, undrained Icing 6 oz. cream cheese 1 tsp. vanilla 3/4 stick margarine 1 1/2 cup confectioner's sugar |
Directions
Mix all in a bowl by hand. (Do not beat.) Pour into ungreased 13"x9" pan. Bake at 350 degrees for 40 minutes. Let cool completely in pan. This cake is considered to be low cholesterol. Icing: Mix cream cheese, vanilla and margarine together until creamy. Add 1 1/2 cup confectioner's sugar. Spread on cake. Kaye Schnell |
