Queen Elizabeth Cake
Ingredients
1 cup chopped dates 1 ripe banana (fairly big) 3/4 cup boiling water 1 tsp. baking soda 1/2 cup butter or margarine 3/4 cup white sugar 1 egg 1 1/2 cup flour 1 tsp. baking powder 1/2 tsp. salt 1/2 cup chopped nuts (any type on hand) 1 tsp. vanilla Topping: 5 tbsp. brown sugar 3 tbsp. sweet cream 3 tbsp. butter or margarine 3/4 cup slivered almonds and coconut |
Directions
Combine water and baking soda and pour over the dates and banana; let cool. Sift dry ingredients and add to butter mixture. Add the date mixture and beat fairly well. Add the nuts and vanilla. Bake in a greased and floured pan (approx 7"x12") at 350 degrees for about 45 minutes. Topping Combine brown sugar, cream, butter or margarine, slivered almonds and coconut. Cook about 3 minutes and pour over hot cake when the cake is baked. Return to oven to brown top (about 5 minutes). |
