Winter Vegetable Soup
Ingredients
1 medium onion, chopped 4 cloves garlic, minced 2 tbsp. vegetable oil 5 cups hot water 2 cans chicken broth (10 1/2 0z.) 1/2 small head cabbage chopped 4 medium carrots, sliced 3-4 celery ribs, sliced 2 medium potatoes, peeled and cuped 1 tst. dried oregano 2 tsp. dried basil 1 can small white beans 1 tbsp. dried parsley flakes grated Parmesan cheese |
Directions
In a 5 or 6-quart sauce pan over medium heat, saute onion and garlic in oil until li9mp, about 3 minutes. Add everything except last three ingredients. Simmer for 30 minutes. Stir in white beans and parsley. Cook 5 minutes more. To serve, ladle into soup bowls. Pass Parmesan cheese. Serve with crusty bread and butter (no salt) . Makes eight 1 1/2- cup servings.
