Cranberry Pudding Pie
Ingredients
2 cups raw cranberries 1 1/2 cups sugar 1/2 cup chopped nuts 2 eggs 1 cup flour 1/2 cup butter 1/2 cup shortening |
Directions
Grease a 10-inch glass pie plate and spread two cups of raw cranberries over the bottom of the plate. Sprinkle with sugar and chopped nuts. Beat eggs well. Add sugar gradually and beat until thoroughly mixed. Add flour, melted butter and melted shortening to the egg and sugar mixture and stir well. Pour batter over the cranberries and nuts in the pie plate. Bake in a 325 degree oven for one hour or until the crust is golden brown. Serve either hot or cold with vanilla ice cream or Cool Whip.
